Succulent Pork stew by Sandra Attard

Ingredients:

  • 500 grams Pork Fillet
  • 3 celery sticks
  • A cup flour (with a pinch of salt & pepper) to coat the pork
  • 1 onion (cut in half and half again (width way) and sliced
  • 4 Bay leaves
  • Rosemary
  • 2 cloves garlic
  • 1 cup white wine
  • 1 cup vegetable stock
  • Some parsley for garnishing

Method:

Cube the pork fillets

Lightly coat the cubes with the flour and put them aside

Chop the celery, onion, garlic and herbs and sauté in olive oil, Until Soft

Add pork (cubed) and fry until brown (important)

Add the wine first, till it evaporates

Add the vegetable stock and let it slowly cook until almost all absorbed

Serve stew with, rice, couscous, bread or pasta
