Strawberry tartlets
For the sweet pastry : 600g plain flour , 300g butter , 200g sugar , 3 eggs , vanilla and lemon zest.
Sieve the flour rub in the butter to a sandy texture, add the sugar and beaten eggs , vanilla and zest and mix to a smooth pastry , and leave to rest for an hour.
Put the pastry rounds into tartlet tins. Bake in the oven at 180c till the pastry is cooked . Leave the pastry to cool and brush the inside of the tartlet cases with melted chocolate , when cool fill in with pasticciera cream. Cover with strawberries and glacé with hot jam.
