Chocolate orange and kinnie cake

This is a cake made with our trademark favorite soft drink that is made using bitter oranges .Isaid kinnie in a cake ! But it helps make the cake moist & compliments the orange zest & juice used in the cake . This is a lovely chocolate cake ,light and moist and like most of my cakes very easy to make and using only a wooden spoon. This is the first time I tried it and I was a bit worried because the batter was a bit runny and thought it was too much for my bunt tin so I poured some in a small bunt tin ,then when they were ready I sandwiched together with cream cheese icing . My family gave it 2 thumbs up so I will do it again 🙂


  • 250g flour
  • 1 teaspoon baking soda
  • 1 heaped teaspoon baking powder
  • 200g sugar
  • 250g unsalted butter or margarine
  • 200ml kinnie
  • 100ml orange juice
  • zest of 2 oranges
  • 3 tablespoons cocoa
  • 2 large eggs


  • Preheat oven 180C and grease a 24cm cake tin
  • In a large bowl sift the flour,baking powder,baking soda and cocoa. Mix in the sugar and orange zest.
  • In a saucepan melt the butter and add the kinnie .
  • In a small bowl beat the eggs with the orange juice and add to the butter and kinnie .
  • Pour this mixture onto the dry ingredients and beat until you have a smooth batter.
  • Pour the batter in the tin and bake for about 35-40 minutes . Check with a skewer if it comes out clean its ready.
  • Let it cool for ten minutes in tin then turn out to cool.
  • When its cool you can decorate with a ricotta or cream cheese icing . Use a tub of cream cheese or 350g ricotta and stir it well with 3 tablespoons sifted icing sugar and a tablespoon of kinnie.Decorate with orange zest .
