Gluten Free Prawn Carbonara

My initial reaction when I was diagnosed Celiac was … oh my God … no pasta! I could eat it every day I loved it so much! You could combine it with so many different sauces!

So I began trying out different brands of gluten free pasta … some were so terrible that whilst cooking, the water turned into a perfect concoction to be used as wallpaper glue! Some tasted insipid, and some tasted sooo gluten free … yuk ! Finally I have found some brands which I love, they are new and not sure if available everywhere yet. Now I can finally enjoy pasta like I used to!

So, until you find the gf pasta you like … my advice is … if you cannot get your hands on good gf pasta, then always ensure that the sauce you are going to serve it with, has to make up for the pasta! 🙂

Here is one sauce that is quick to prepare … the basic Carbonara but with a seafood twist to it !

Ingredients (for 2 servings)

100 grams smoked pancetta
8 – 10 large prawns (peeled and deveined)
2 cloves of garlic
Salt & Pepper
Chilli Flakes (optional)
2 egg yolks
2 tbsp heavy cream
3/4 cup grated Parmesan
2 tbsp chopped parsley

Method

Whilst your pasta is boiling, sautee the pancetta in a little oil and set aside.  Add the garlic and prawns and sautee until just cooked. Remove.  In a bowl, mix the beaten egg yolks, heavy cream, Parmesan and parsley. Drain the pasta, but keep some of the water.  Add the pasta to the pan, the pancetta and prawns and toss. Remove the pan from the heat and add the egg mixture and toss the pasta gently. If too dry, add a bit of the pasta water and again mix gently to coat.
