Pumpkin & broad bean pie

Heat some oil in a saucepan and saute 2 large chopped onions,chopped celery and 2 diced carrots. Add 1 teaspoon mixed spice and let it cook until the onions soften. Add about 3 cups of diced pumpkin ,2 chopped garlic cloves . When the pumpkin softens add 3 cups of fresh (or frozen ) broad beans.Mix in 1 tablespoon of tomato paste and 1 cup of polpa (chopped,skinned tomatoes ) 1 cup of spinach and 1 cup of peas. Season with salt 7 pepper to taste . if needed add some more water if it is too dense . Let it simmer on low flame until its cooked .
Let it cool a bit before you use it to fill your pie.1959369_559157244191221_985447330_n
