Refreshing pasta salad!
Boil 250g of fresh tortellini (spinach and rikotta) or stachetti according to packet instructions; fry in some olive oil a chopped onion, 3 cloves garlic, 6 chopped sun-dried tomatoes, one cubed courgette, half a small aubergine, cubed, one small green pepper chopped; drain pasta and mix with 2 tbs home-made pesto; add the fried ingredients; cool; add 1 tbs balsamic vinegar, 2 tbs chopped fresh herbs, 2 tbs capers, a few black olives, 1 chopped basil gbejna. Serve chilled.
