Shrimp is one of my favourite freezer standbys when we just fancy something warming but easy! This uses Ajvar to give the colour and roasted red pepper kick! Ajvar is a roasted red pepper meze whic I found in the Tower Supermarket in Sliema so I know it is available in Malta. It is lovely and you should give it a go.
- To make the dish, prepare some steamed basmati rice.
- While the rice is cooking,
- fry a chopped clove of garlic and a sliced onion in a little olive oil and a knob of butter, along with a teaspoon of fennel seeds, a tablespoon of tandoori spice and a pinch of chilli flakes.
- When the onions are cooked through, add about 8 giant shrimps, sliced lengthways, to the onion mix and cook for a minute.
- Add three heaped tablespoons of Ajvar to the shrimps and two heaped tablespoons of plain natural yoghurt and stir well. Cook for about 5 minutes and taste. Adjust the seasoning as needed.
Serve with some chopped spring onion greens, red jalapeño and salted almonds sprinkled on top.
Just lovely. Serves 2
