Seasonal Strawberry & Lemon Curd Tart

As strawberries are in season in Malta now, I thought I would share this recipe which is a favourite. I’ll have to wait until June before making this again!

I love ‘Good things to eat’ by Lucas Hollweg; great eating is exactly its heart and this is a very simple seasonal tart in – half tart / half cheese cake from his book. It’s become a family favourite and we adapt it to suit the seasons

The base is
250g crushed biscuits (digestives or ginger) and 110g melted butter,
mixed, and pressed hard into a tart tin and left in the fridge to set.
After an hour or so, prepare the filling;
just 250g mascarpone cheese mixed with 175g really good quality lemon curd until they’re light and creamy. Spread this mix over the biscuit base and then top with halved hulled strawberries, raspberries, blackberries or whatever you fancy. You should need about 500g.

I’ve tried this with orange curd and blood oranges for a winter tart and that was lush too.

Pop back in the fridge to chill and set until you need to serve it.
