Quick artichoke and anchovy cichèti

Always good to have a few quick recipes on standby for when folks pop in for a drink. This is a store cupboard stand by, things most people have in hand.

It goes really well with a glass of chilled white, just right to pique the taste buds.


Jar marinated artichokes – the best quality you can get. It will make a difference!
About a tablespoon of anchovy pureé. (Again, check the % of anchovy in the purée before you buy, the higher the better; Italian brands tend to be superior!)
A good squeeze of lemon juice and the zest of a lemon
A very finely chopped clove of garlic
A few fresh parsley leaves
Some fresh ground black pepper


Either slice / chop the artichokes very finely, add all the other ingredients and give everything a good mix; or blitz everything in a blender depending on whether you prefer a chunky or smooth texture. I like mine chunky!

Top a few crostini and serve with a glass of chilled prosecco
