Fish pie
This is a healthy all-in-one fish pie which my family loves! I do this often in winter.
Lightly grease a dish; put some fish fillets to cover the bottom of the dish. In a pan cook in some olive oil a chopped onion, add some sliced green pepper, 4 chopped tomatoes, 3 sliced carrots, season well. Add 4 tbs flour to form a roux; add 500ml skimmed milk, one fish stock cube, add one glass wine if you so like. Mix to form a thick sauce; add a handful of frozen peas, one small tin sweetcorn, some defrosted prawns. Mix well and top the fish with this sauce. Thinly slice 7 potatoes, layer on top of the sauce, drizzle with some olive oil, season, sprinkle some paprika and bake for about an hour on 150 (electric fan oven).
