Torta ta’ San Martin (St. Martin’s flan)

Slowly melt in a pan one packet chopped dates, one packet dried figs, 2 finely chopped and peeled apples, 1 tbs mixed spice, 1 tsp ground cinnamon, 1 tsp aniseed, 1/2 tsp ground cloves, juice of 3 Maltese oranges, lemon and orange zest, one tot Martini or sherry.  Meanwhile beat two egg whites till thick, add a few drops vanilla essence, fold in 5 tbs self-raising flour, add the cooled date mixture, plus 100g walnuts and 200g hazelnuts.  Mix well. Line a dish with rice paper and bake in a preheated moderate oven (fan electric 150) for about 30 minutes.  Nice served with vanilla ice-cream!
