Tadam mimli bil-couscous (Couscous stuffed tomatoes)
Halve four tomatoes and remove flesh and seeds; in a bowl prepare instant couscous by adding 200g couscous, one mugful of vegetable stock; cover for 5 minutes; separate grains with a fork. In the meantime fry a chopped green pepper, one small onion, 2 chopped garlic cloves, and add a handful sunflower seeds, a handful of raisins, and 1 tbs ras al-hanut spice. Mix with couscous and add 2 tbs olive oil. Fill the tomato halves with the couscous, chill and serve.
