Kejk tal-frawli! (Strawberry gateau!)

For the cake:  Beat together 225g soft margerine, 225g sugar, 275g self-raising flour, (sieved), 2 tsps baking powder, 4 large eggs, 4 tbs milk, until very soft and fluffy.  Line a 30x23cm round dish with baking paper….level and bake for around 40 mins in a preheated oven (180 lowered to 150 fan oven).  Cool and cut into three layers.

Beat one thin of nestle’s cream or one tub fresh cream, and two tbs sugar till thick;  spread the cake layers with melted strawberry jam and Martini (dry);  add cream.  Finish off by arranging some nice Maltese fresh strawberries and juicy Maltese orange segments (or kiwi for a nice contrast!).
