Sicilian style ftira!

Grill or altenatively fry one small sliced aubergine, one sliced courgette with some chopped garlic, one sliced tomato.  Spread the base of the ftira with home-made pesto (a good handful basil leaves, 3 tbs olive oil, 3 tbs grated parmesan and 5 cloves of garlic finely chopped in processor).   Layer the aubergine, courgette, tomato add some sliced fresh gbejna (goat’s cheese) or some mozarella, drizzle with olive oil, add some sliced beef-steak tomatoes, and a few basil leaves.
