Rock buns and a slight variation!

Rock buns (and a slight variation)

250g self-raising flour; 75g butter; 75g dried mixed fruit; 150g sugar; 1 egg; some vanilla; tsp mixed spice; 1 tsp bicarbonate of soda; pinch salt.

Using a processor rub butter in sieved flour till it resembles breadcrumbs; stir in sugar, fruit, salt, spices and egg.  Bind to form a stiff dough.  Line a dish with baking paper; form small balls and sprinkle with sugar; bake in centre of the oven at 170 degrees for 15 to 20 mins.

Variation:  add one finely chopped apple, a pinch of cinnamon, zest of half a tangerine, 100g nuts (brazil nuts or almonds).
