Broccoli and blue cheese quiche
Line a dish with shortcrust or olive oil pastry. Chop two leeks, two spring onions and saute till soft. Cut some broccoli florets; put on the base 200g ricotta, add 100g grated cheddar cheese, one half a grated white gbejna, add the sauted leeks and spring onions, the broccoli florets and 100g crumbled blue cheese. Beat 6 eggs and mix with 500ml of skimmed milk, add 2 tbs of grated parmesan, a grating of nutmeg and season. Add some chopped parsley. Pour egg mixture on the pie and bake in a moderate oven (fan electric 175/gas 160) for around 40 minutes or till golden.
Smoked salmon quiche
Line a dish with pastry; add 100g ricotta at the base, add 100g grated cheddar and half a gbejna; add two finely chopped spring onions, a handful of chopped parsley, the zest of one lemon, and top with smoked salmon pieces. Beat 4 eggs with 500ml skimmed milk, season and pour on top. Bake as above.
