Qarabagħli u tadam mixwi (grilled tomatoes and zucchini)
Finely slice one large courgette (zucchini) and two firm tomatoes; line a dish with baking paper; arrange in overlapping rows, alternating between the zucchini and tomatoes; sprinkle with oregano, season, grated parmesan and drizzle with olive oil. Cover in foil and bake in a hot oven (2oo fan) for around 30 minutes, lower temp. to 175 , remove foil, and bake for a further ten minutes till golden brown. Nice served warm or cold!
