Pudina tal-ħobż (Maltese bread pudding)
Take a day-old loaf (or sliced loaf) and tear into pieces (remove crust). Pour one mug hot water to soften, then drain; add one cup milk, 4tbs cocoa, 2 tbs drinking choc., 1 pkt dried mixed fruits, some glace cherries, some almonds/hazelnuts, sugar to taste (I suggest about 3 tbs), 1 tbs mixed spice, 1 tbs cinnamon, 1 tsp ground cloves, some vanilla, some cubes cooking chocolate, 3 beaten eggs, a dash of marsala. Pile into a greased dish, dot the top with chunks of butter, and add more nuts. Bake in a preheated oven (150 fan) for about 45 mins. Nice served cold with vanilla ice-cream!
