Pastini tal-coconut
200g margerine
200g sugar
300g coconut
300g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
a few drops vanilla essence
3 large eggs.
Method: Beat the butter and the sugar; add the eggs and beat well; add the flour, coconut, and all else. Shape into small balls and top with a glace cherry, flatten slightly. Bake in a dish lined with baking paper in a moderate oven (fan electric 150) for about 20 minutes or until golden.
