Pasta con pesto di pistacchio
This is a very easy pasta dish but which is so delicious! It traditionally hails from Bronte Sicily, but the ingredients are readily found in Malta.
Whizz together in a food processor 100g pistacchio nuts (shelled) a good handful basil, 2 large garlic cloves, half a cup good olive oil, half a cup good grated parmesan cheese, seasoning, one tub cream. Boil some pasta and mix in the pesto…serve immediately. (my note: if you have some left over, just add some milk to get the creamy consistency back).
