Left-over turkey Christmas pie!
If like me you were left with about 2/3 of a large bird over the holidays, I urge you to try this delicious and easy-to-make pie!
In a pan cook one large chopped onion and one leek till soft; add 4 rashers of back bacon, chopped, 8 pork sausages (skin removed), turkey seasoning (or make your own using sage, thyme, salt and pepper), left over cooked turkey (or capon) shredded to pieces, a handful of cranberries (optional but they add a nice taste!), 2 chopped carrots, and 2 finely chopped potatoes. Cook till all is soft and mushy. Dissolve 4 tsps of turkey bisto in a mug of hot water; add to the mixture. Add one beaten egg, season. Line a dish with shortcrust pastry (here I used a pastry made with half plain flour and half spelt flour, the texture was similar to wholemeal pastry), add the filling, top with more pastry and brush with a beaten egg for the nice glaze. Cook in a pre-heated oven (fan electrice 150/gas 170) for about an hour or till golden. Nice served warm or cold for picnics!
