Maltese bread pudding: chocolate orange variation!

Chocolate orange Maltese bread pudding

In a bowl tear one loaf of Maltese bread crusts removed;  add the zest and juice of 5 Maltese oranges;  add 3 tbs of cocoa, 2 tbs of drinking chocolate, 4 tbs of sugar, 1 tbs mixed spice, 4 tbs home-made marmalade (I made some with Maltese oranges; please see recipe on the blog), 100g chopped brazil nuts, some Marsala and hot water to soften bread and 300 ml skimmed milk. Mix well and add 2 beaten eggs and 100g cooking chocolate cut into chunks.  Grease a dish and pour mixture;  finish off with more orange zest and brazil nuts.  Bake in a moderate oven (175 fan electric) for about 40 minutes.
