Lemon Cupcakes!

Lemon cupcakes

Mix together 250g butter,250g sugar, 325g plain flour, 5 eggs, 1 tbs bicarbonate of soda, zest and juice of two lemons.  Line a patty tin with cupcake cases, fill the cases and bake in a preheated oven (fan electric 175) for 20 minutes.
