Kwareżimal (a traditional Maltese sweet eaten during Lent)


Mix together in a bowl:  500g plain flour, 250g brown sugar, 500g pure ground almonds, 3 tsp baking powder, half a tsp bicarbonate of soda, 3 tbs cocoa powder, 3 tbs honey, 3 tsp mixed spice, 1 tsp ground cloves,1 tsp cinnamon, few drops vanilla, grated zest and juice of one orange and one lemon, 3 tbs brandy or whisky.  Bind with some milk till you have a stiff dough.  Form into bars and bake in a preheated oven (160 fan electric/ 180 gas oven) for about twenty minutes or till done.  Should come out of the oven fairly soft, they will harden on cooling.  Melt more honey, brush them with melted honey, top with flaked almonds.
