Insalata bil-brunġiel u bżar aħdar mixwi (grilled aubergine and pepper salad)
Thinly slice one aubergine; cut one large green pepper into thick strips; drizzle with olive oil and grill for about 15 minutes; cool; in a dish layer two slice grilled aubergine overlapping each other, one slice gruyere cheese, top with grilled pepper strip and top with another slice of cheese. Grill till cheese melts. Nice served warm or cold.
