Spaghettini and cheese omelette

Boil some spaghettini for five minutes; drain. Beat four eggs, add grated cheddar, white ġbejna (cheeselet) and some grated parmesan. Finely chop some parsley and basil (optional, but nicer!).   Mix pasta with eggs, cheeses, herbs and season well.Shallow fry on both sides on medium heat for about ten minutes (five mins. on each side)….scatter with more chopped herbs!
