Fried filleted lampuki!

To fillet the lampuki:  cut the head and tail of the fish; split the fish in two;  remove the middle bone and cut away the side bones using a very sharp knife.  Beat an egg and dip fish fillet first in the beaten egg then in some semolina mixed with some salt.  Shallow fry for a few minutes till golden with chopped garlic.  Serve with chips and green pepper sauce.  (Recipe also in the blog)
