Freezing aubergines!

Today I went to the farmers’ Market in Ta’Qali and bought a whole lot of aubergines for just 1 euro!! This is how I freeze them;  first wash and remove stalk;  cut into slices and sprinkle with rock salt and leave in sieve for around twenty minutes to ‘sweat’them (remove the bitter juices);  rinse thoroughly and grill till just done;  cool; then put in single layers on foil, repeat layers and close the foil packet.  Freeze overnight;  the following day remove from foil, and put in plastic bags and refreeze ready for use!
