Pan forte di Sienna
300g plain flour
200g sugar
300g glace cherries and candied peel
300g mixed nuts (almonds/hazelnuts/brazilnuts)
3 eggs
3 tbs honey
3 tsp mixed spice
1 tsp cinnamon
Rice paper to line the dish
some water
Method: Mix the dry ingredients; beat the eggs and melt the honey in a micro-wave oven; mix the eggs with the honey and beat into the mixture, add some water if mixture is too dry. Line a dish with rice paper and pour the mixture and flatten. Bake in a preheated oven at a temp. of 130 (electric fan oven) on the bottom shelf for about 1 hour. Should be soft but an inserted knife should come out clean. Cut into bite sized squares and lightly dust with icing sugar. Keeps well in an airtight tin for about two weeks.
