Chicken bake

(For this recipe you would need about 2 kilos of fresh chicken breast, 200g pancetta, 200g ham, 100g salami, a few spinach leaves).  Line a greased dish with two chicken breasts which you would have sliced open and flattened by beating, to completely cover base of dish.  Put a layer of pancetta, lean ham, salami (optional), then cover with fresh spinach leaves, scatter  two fresh cheeselets (gbejniet) broken into pieces, a grating of nutmeg, grated cheddar cheese (about 100g);  beat two eggs and pour on spinach;  top with more ham and chicken breast and cover the chicken with slices of pancetta. Sprinkle 2 tbs of soy sauce and scatter some fresh thyme and rosemary, add some chicken seasoning, season add one chopped onion and pour a glass of white wine over everything;  Cover with foil and pierce with a knife;  bake in a hot oven (200 fan electric oven) for about one hour.  Remove from the oven and strain the juices to make a gravy.  Nice served with roast potatoes and steamed veg.
