Bħal fil-forn bil-braġjoli tal-majjal (pork roll casserole)


Buy thin lean pork fillet slices; put a layer of sliced gammon, slice provolone cheese or similar, slice tomato, 1 sage leaf on each pork slice; roll up and cook in slow cooker or pan on the hob with sliced potatoes, thickly sliced onions, chopped garlic to taste (for four people I use about 5 cloves).  Lightly grease the slow cooker or pan, start with a layer of onions, then potatoes and more onions and garlic, put the pork rolls in the middle and add more onions, potatoes and garlic.  Add one bay leaf, one glass wine, one glass pork stock (dissolve one cube);  sprinkle with 2 tbs mixed spice, 1 tsp ground cloves, 3 tbs fennel seeds, crushed pepper.  Optional, but nicer, add one chopped Maltese sausage.  Drizzle with some oil.  Cook in slow cooker for around 5 hours for a nice soft consistency, or alternately cook on a very low heat on hob for around two hours, or bake in a moderate oven (fan 170) for about 1.5/2 hours.
