Banoffi cake!
This is a variation I invented on the yoghurt cake the result of which is yummy!
1 pot white chocolate light yoghurt (or vanilla)
1.5 pots sugar
3 eggs
1 pot sunflower oil
3 pots plain flour
2 tsps baking powder
2 tsps bicarbonate of soda
1 chopped banana
50g chopped cooking chocolate plus 50g for decorating.
N.B. Use a cleaned yoghurt pot for measure.
In a bowl beat the yoghurt and sugar; add the eggs. Sift the flour, baking powder; add some flour to the chopped bananas and chocolate to prevent them from sinking. Add to the mix and lastly add the oil and beat well. Bake in a preheated moderate oven (fan electric 170) for about 30 minutes. Cool, split in two, and spread with Carnation caramel (or similar). Drizzle with some melted chocolate on top.
