Almond, apple and cinnamon cake (kejk tal-lewż u t-tuffieħ bil-kannella)
Ingredients:
175g butter/margerine softened
175g sugar
175g ground almonds
175g self raising flour
1tsp bicarbonate of soda
1 tsp ground cinnamon
2 large eggs at room temperature
3 peeled and sliced apples
2 tbs milk
Method: Beat together the butter and sugar till fluffy; add the eggs and beat again. Sift the flour, bicarbonate of soda,and cinnamon and add to the butter mixture. Add the ground almonds and beat again, add the milk. Line a 9 inch/23cm dish, put a layer of the cake mix and then layer the apples; finish with another layer of the cake mixture. Bake in a preheated oven (fan electric 175) for about 45 mins. Cool and dust with icing sugar.
