Tuna Pasta Salad

  • 150gr cooked pasta
  • 1 can tuna in olive oil, drained
  • 1/2 cup red pepper, chopped
  • 1/2 red onion, chopped
  • 2 tbs capers
  • 6 cherry tomatoes chopped
  • 8 olives chopped
  • Extra Virgin Olive Oil
  • Mint leaves
  • Sea salt & freshly ground pepper to taste
  • Balsamic Vinegar
  • Some freshly squeezed lemon

1. Boil pasta and leave al dente

2. In a bowl mix all the ingredients with the cooked pasta

3. Sprinkle with extra virgin olive oil and a dash of freshly squeezed lemon

This salad is one of my personal favourite and we often prepare for winter picnics or summer seaside quick snacks. It is also an ideal side dish to accompany freshly barbecued fish. Enjoy!
