Ingredients:

  • 1kg thick fresh pork flank
  • 500g grated cheese
  • chopped parsley
  • 3 Maltese sausages (filling only)
  • hard boiled egg
  • salt and pepper

Method:

Slit the flank with a sharp knife making a pocket.

In a separate bowl mix all the ingredients well.

Stuff the flank with this mixture and sew it up.

Place the hard boiled egg in the middle of the filling.

Roast the flank in a medium to hot oven for 2hours or steam for 1 hour 20 minutes.

Serve with roast potatoes

Pork is a thin meat which in this recipe is stuffed with various ingredients in order to flavour it up. The Maltese sausage help enhance and give it a unique taste.
