Ingredients:

  • 650 gr peeled and cut in squares potato
  • 1 kilo spinach, frozen or fresh
  • 3 slices of back bacon, fat removed and cut in small cubes
  • 2 large onions, chopped, not too fine
  • 1chicken cube
  • 1veg cube
  • Fresh black pepper and sea salt
  • Parmigiano for the plate

Method:

Saute the onion in a little bit of oil, cook for few minutes, then add the bacon. Cook till bacon starts to take colour.

Add the potatoes, and cook for few minutes to release flavour. Add the water and stock cubes and bring to boil.

Cook for few minutes from boiling, till pot gets just tender.

Add the spinach and cover and cook for3 minutes.

Blend the soup in a blender, liquidizer etc. do not wizz too much just enough to blend.

Back on stove and cook on simmer for 5 minutes.

Serve with parmigiano or any grated cheese of your liking.

Optional: You can add milk or cream to this soup if you prefer.

This is a healthy vegetable soup, whose taste is enhanced due to the bacon, seasoning and cheese. It is easy to make and can be taken as a starter before a main course meal. It contains iron, potassium and some carbohydrates obviously to provide you with some energy.
