Pork Spare Ribs with White Wine & Herbs by Graziella

Ingredients:
- 1kg of spare ribs (3 pieces p/p)
- 4tbs Olive Oil
- 1 Large Onion
- 1 tsp Rosemary (if using fresh 1 sprig)
- 1 tsp Thyme (if using fresh 2 sprig)
- 1 tsp Sage (if using fresh 5 leaves)
- A bit of Chilli (Optional)
- 1tsp Fennel Seeds
- 1 Glass of Dry White Wine
- 1 beef stock pot (Knorr)
Method:
Chop Onion and fry on a low heat till soft. Add the Pork Ribs and let the meat seal for about 3 minutes on each side. Then add the Rosemary, Thyme, Sage & the Chilli (Optional) and let again cooking for about 5 minutes, turning the meat a couple of times nd making sure you don t burn the onion. Add the Glass of White Wine, the Fennel seeds nd the Beef stock pot. Leave Cooking, Covered on a Low Heat for about 40 minutes, till meat is soft & tender. Last 5 minutes Uncover so the Liquid Thickens and you will have the Gravy to serve with.....if it dries alot, just add a bit of Water. I Served these Ribs with a Potato nd Pumpkin Mash and also some Mushrooms with Garlic & Parsley.
