Patata Fgata
Ingredients:
- 6 large potatoes
- 2 large onions, slices
- 2 cloves garlic, crushed
- 1 or 2 bay leaves
- Fresh herbs, chopped - use parsley, chervil, marjoram, basil or mint. If using oregano be sparing, as it is strong
- 1 tbsp white wine
- 2 tbsp olive oil
- Salt and pepper
Method:
Peel the potatoes and then chop them into large, irregular shapes, each approximately the same size.Place them in a large saucepan with about 5 tbsp water.
Hence add the sliced onions, garlic, herbs and seasoning.
Insert the wine and olive oil, mixing all well together.
Cover and bring to a boil, then simmer for 20 minutes.
Then the water will have evaporated and the vegetables will be ready to eat.
