Mix together, in a bowl, the meat with the breadcrumbs, parmesan, eggs, a sprig of chopped parsley and salt until you get a smooth mixture.
Spread the mixture out on a sheet of tin foil greased with oil and on top place the ham and caciocavallo cheese with a few parsley leaves.
Draw together the edges of the mixture and wrap it well in the foil. Cook in the oven at 180° for 15 minutes.
Remove from the oven and it stand for 15 minutes.
Slice and serve.
