Lemon poppy seed cake by Karen Mifsud


  • lemon poppy seed cake
  • 200g plain flour
  • 1/4tsp baking powder
  • pinch salt
  • 250g butter
  • 4 large eggs
  • 1tbsp lemon zest
  • 1tsp lemon or vanilla essence
  • 80ml fresh cream
  • 3tbs poppy seeds


Beat together the butter and sugar add the eggs and mix well then mix the zest and essence at last with low speed beat add the dry ingridients and cream.

Bake 175c.when the cake is ready put 60ml of water and 80g of sugar in a pan and heat until the sugar dissolves then add 80ml of lemon juice,while the cake is still hot brush all over the cake with some lemon syrup.
