Ingredients:

  • 1Kg lampuki
  • 3 onions
  • 400g tomatoes
  • 2kg spinach (previously boiled)
  • 100g kunserva
  • 100 Chopped black olives
  • 50g capers
  • Mint
  • Seasoning
  • 500g puff pastry
  • Flour

Method:

Clean the fish , cut into slices and roll in the seaoned flour. Fry fish in hot oil untill golden brown, allow to cool and remove bones.

Fry chopped onions in same oild used to fry the fish, add tomatoes and simmer for around 15 mins on low heat.

Add all the remaining ingredients and cook over low heat for another 30 mins Add the fish to the mixture and mix well.

Line a greased baking dish with the pastry and fill in with mixture, covering the top once filled. Pierce the top with a fork and bake until golden brown.
