Hummus by Luca


  • 800 grms chick peas (remove the water from the can)
  • 300 ml olive extravirgin oil
  • 5 cloves of garlic
  • 1 spoon of fresh parsley (leaves)
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of ground hot paprika
  • 1/2 teaspoon of salt


Put olive oil (about 2 cm in height), garlic cloves, fresh parsley, chickpeas, salt, ground pepper, hot paprika in the mixer.

Mix with the blender for about 1 minute. Switch off the blender, use a spoon to remove the chick peas that are stuck inside the blades and put them together with the other ingredients already mixed, then add some more olive oil and mix again with the blender for 2 minutes. Once ready, put in a bowl and if needed add some olive oil and mix with a spoon.

Adjust salt, pepper and paprika to make it more salty or more / less spicy.
