How to flavour olive oil using fresh herbs

Ingredients:
- 2 cups extra virgin olive oil
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 sprig fresh oregano
- 2 fresh bay leaves
- 1 clove garlic – peeled and crushed
Method:
Mix together all or a selection of the above ingredients to achieve a delicious infused olive oil. Experiment with amounts as they will vary according to taste. Mix a day prior to use, to give the flavours some time to infuse. Then store in the fridge, covered with cling-film, bringing the mixture out about an hour before use so that it will return to room temperature. This can be stored in the fridge for no longer than 1 week.
