Ingredients:

  • Maltese bread dough
  • Pork cut into cubes(lean or preferably
    a nice cut of Pork belly)
  • 1 onion
  • a few garlic cloves
  • grated nutmeg
  • fresh Basil
  • 2 beaten eggs
  • very thinly sliced fresh
    tomatoes sprinkled with rock salt
  • ( to be prepared ahead) and
    left in a colander to release liquid.

Method:

Start by sauteing the onions in some oil,add garlic,nutmeg and Pork.

Do not cook Pork through, as it will finish off cooking in the oven.

Before switching off gas,add the fresh basil.

Roll out dough quite thinly,and place in an oiled shallow baking tray.

Make sure both sides of dough are greased.

Distribute the mixture evenly on top,pressing the pork lightly into dough base.

Leave any access liquid in the pan.

Pour the beaten eggs on top and cover surface with the tomatoes.

Season with salt and pepper,drizzle some oil and sprinkle generously with Sesame seeds.

Bake in oven.

When placing the dough in tray make sure to raise the edges,so that the beaten eggs do not run over the side. Serve warm and enjoy!!
