Fish in salt

Ingredients:
- 1 large fish with a thick resistant skin (e.g. gilthead, bass, salmon, etc.)
- A great deal of cooking salt
- Extra virgin olive oil
- 1 lemon
- 2 gloves of garlic
- 1 sprig of parsley
- 1 pinch of black pepper – salt
For the dip:
Method:
Cover the bottom of a Pyrex dish with a 2cm layer of cooking salt. Clean the fish and lay it on top of this layer of salt; cover the fish completely with another thick layer of cooking salt. Cook in the oven at 200° for 40 minutes. Remove the salt and serve immediately.***
Cooking fish in salt (in other words completely covered by a thick layer of cooking salt) is a very effective and simple method.
