Ingredients:

  • 1 large fish with a thick resistant skin (e.g. gilthead, bass, salmon, etc.)
  • A great deal of cooking salt

  • For the dip:
  • Extra virgin olive oil
  • 1 lemon
  • 2 gloves of garlic
  • 1 sprig of parsley
  • 1 pinch of black pepper – salt

Method:

Cover the bottom of a Pyrex dish with a 2cm layer of cooking salt. Clean the fish and lay it on top of this layer of salt; cover the fish completely with another thick layer of cooking salt. Cook in the oven at 200° for 40 minutes. Remove the salt and serve immediately.
