Fish fry frittes

  • 500g of fish fry
  • 50g of parmesan
  • 100g of milk
  • 1 egg
  • 4 heaped spoonfuls of superfine flour
  • A pinch of bicarbonate and one of salt
  • A little nutmeg
  • A sprig of parsley
  • Seed oil

Put the flour, milk, parmesan, egg, parsley (finely chopped) salt and a sprinkling of nutmeg into a bowl. Mix these ingredients carefully, until you obtain a smooth mixture. Add the fish fry and the bicarbonate. Mix it all and let it stand for 20 minutes. Heat the oil in a frying pan and place the mixture in the oil one spoonful at a time. Fry on both sides and serve hot.
