• 1Medium wholemeal pitta, warmed and halved.
  • 25g feta cheese, crumbled
  • a few slices of red onion or spring onion or any type of onion.
  • 1 tomato, halved or cut into wedges
  • few slices of crispy lettuce
  • 1 teaspoon lemon juice
  • black pepper to taste.


Mix all the stuffing ingredients together, then use to stuff the pitta bread..............Enjoy!

To vary this recipe you can also add a little chopped garlic OR mint sauce to the filling
