Cauliflower Fritters – Pulpetti tal-Pastard

Ingredients:
- 1 cauliflower
- 1 cup whole wheat flour
- 2 eggs
- parsley (chopped)
- Olive oil
- Grated Parmesan cheese
- Salt and Pepper
Method:
1) Boil the roughly chopped cauliflower in salted water until just tender. Hence drain.2) Combine the boiled cauliflower, flour, eggs, grated cheese, parsley, salt and pepper.
3) On medium-low heat, add 1 tbsp of oil , form fritters (pulpetti - the same way you form meat pulpetti).
4) Cook until golden brown, turn and cook on the other side for another few minutes.
