• 4 balls of good-quality mozzarella cheese
    (or small Benna mozarella balls)
  • 400g ripe cherry tomatoes, halved
  • sea salt and freshly ground black pepper
  • extra virgin olive oil
  • a bunch of fresh basil, leaves picked


    1. Divide the mozzarella balls into four plates. Scatter the tomato halves over the top. If you are using Mozarella di Bufala cut into 1/4 inch slices (use 1 mozarella ball per plate).

    2. Season well with salt and pepper and drizzle with olive oil.

    3. Tear the basil leaves up and sprinkle them over the salad before serving.

    Mop up with fresh Maltese ftira :)

    A healthy recipe which doesn’t include many ingredients however still tastes good.
