Sweet Easter Loaf

Ingredients: 400g flour , 75g butter , 75g sugar , 250ml warm milk , 8g instant yeast , vanilla , zest of a lemon and orange , cinnamon , mixed spice , 25g candied peel , 25g cherries , 25g dried fruit , 25g chocolate chips and 25g chopped almonds.

Method: To make the dough
Flour and butter in a large bowl
and rub together till the mixture resembles breadcrumbs. Add the rest of the ingredients and enough warm milk to make a soft dough. Place the dough onto a floured surface and knead well for 5min. Cover and leave to rise in double the size. Knock back the dough and put it in a tin and leave to rise till double in size again. Bake at 180c till golden brown then glacé with hot apricot jam.
